La Petite Maison's Drink – The Method

WThis is an easy version of a drink from our latest menu. This is a large-volume pre-mixed that is packed with flavours of a festive period, rendering it ideal for your celebration. Reserve the remaining citrus syrup you can use for morning drinks, sweets, or to mix more rounds of this cocktail.

Bikini

Yields 10 people

To make the Clementine Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar

For the Cocktail (makes 850ml, enough for 10)

400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch

Method

For the Syrup: Place all the ingredients in a pan, heat until it reaches a gentle boil, mixing to dissolve. Then, remove from the burner allowing it to cool down completely. Decant into an sealable bottle, cap it and store in the fridge, it can be stored for around a month.

To make Premix: Pour all the liquids into one large bottle, leave to sit for an hour, then filter it , ideally through cheesecloth, to ensure it's fully clarified.

For serving: Pour 85ml of your cocktail base into a mixing glass packed with ice, and agitate carefully for about 60 seconds until cold. Filter to a frosted cocktail glass or equivalent, garnish with the cranberries adding the final touch by giving it a quick spritz of mandarin oil over the drink.
